My neighborhood – Akashicho – has not changed much. Because it is far from the commercial station area, the shops are much the same as after the war, some 50 years ago.
My grandparents had a Soba (noodle) shop. Grandfather was famous for looking at customers – holding a ladle of noodle water in one hand and broth in the other – and mixing just the right concentration. It should to be strong for a construction worker; mild for a school teacher.
If the customer left some broth in the bowl, Grandfather would sip it to find out what was wrong. He would adjust it the next time the customer came in.
