SUSHI
Sushi is a popular dish of small pieces of extremely fresh raw fish and seafood pressed into rice seasoned with vinegar. It is mainly served in sushi-ya (sushi shops), usually small, with a counter where the sushi master performs his art for discerning clientele, forming each piece by hand. As with all Japanese food, appearance and freshness is paramount. Sushi is normally served with soy sauce into which a small amount of wasabi (horseradish) is mixed and, to cleanse the palate, shavings of pickled ginger.
